  This is intriguing. You may not guess that this comes from maple syrup if tasting blind, but it is certainly unique. It is off dry but still bright (where does the acidity come from?), a bit of texture, and some sense of fruitiness, a little oxidation, and subtle maple on the finish (though may not get to maple blind).
  Went nicely with spicy Asian dishes. Not sure I love drinking this, but very interesting and worth contemplating...
