  • You can google the up-and-coming (or already arrived?) Fanny Sabre and learn about her tiny, 4.5ha of holdings, the fact that she does everything herself, and that she is one of a handful of Burgundy producers that is both willing and able to grow using biodynamics.

    We first had this delicious wine on the occasion of our 5th anniversary last year. It was recommended by the sommelier at Bouley in NYC, where the markups were steep, but not so bad on this bottle. I tracked down a bottle afterward (we enjoyed it that much) at the wonderful Appelation shop in NYC. We opened it again for our 6th anniversary weekend. This is an amazing buy for <$35 white Burgundy.

    It has a certain precision to it, and a great persistence of flavor and aroma that really engulfs your mouth. It is not a powerful wine, per se, but it definitely has length. There are pretty typical white Burgundy fruit flavors, with a very creamy, leesy character that is well-woven in. I swear I picked up a whiff of oak, but apparently it is all old barrels (for fermentation and aging), so maybe I was mistaken. Anyway, this is a delicious wine with subtlety and class. Would definitely buy again.
