Last week (10-12-2021) I brought this wine to match with a white birthday cake with buttercream frosting (it did). Because there were only two of us at dinner, we left the rest of the wine (not quite 2/3rds of the bottle) at the restaurant for staff to share after hours. They forgot and had just put the cork back in it and placed it in a refrigerator. Eight days later, they asked me if I wanted to try some. Wine was same straw color, but the nose was very different. A lot of caramel creme and almonds, very little fruit in the nose. In the mouth: slight pineapple and tangerine flavors, but it had a distinct lime finish that I have never experienced before in a Sauternes. It retained a nice balance and would have paired well with a citrus meringue pie. It was a wonderful counterpoint to the deeper botrytis fruits from eight days before.

In the fridge for 2 days; on ice for 40 minutes or so (opened) and then allowed to warm for 30 minutes before pouring. Straw-colored wine, no tartrate crystals. Lighter nose of botrytis fruits: pineapple, peach, some almonds and a little vanilla. In the mouth: weight was much lighter than most Sauternes; but nice balance. Pineapple, honey, apple and a little buttercream on the finish. We intentionally chose a lighter Sauternes to accompany a white birthday cake with buttercream frosting. The match was perfect.

Similar service and profile as in my note dated 10-12-2001. Still a lovely dessert wine.

Very sweet. Strong dominant flavors of apricot and honey with hints of lemon and ginger. Silky texture allow to warm 20-30 minutes before pouring.

91% semillon, 9% Sauvignon blanc. Medium body, peach and apricot. Very good, not too sweet. Great with chocolate.
