Immediately after opening: Dense color with slight purple hue. Nose has black cherry, slight olive tapenade and cured meat, and hint ripe fruit. Palate does not share the ripe fruit characteristics of nose. Med+ tannins, even palate tannin coating, balanced fruit and earth, med lingering finish with the back palate fading first. Decanted using wide spread technique and left for 1 hour. Nose relaxed and showed more Eucalyptus and mint. Palate still gripping without food but smoother. Would pair with anything pork chop +.
