  • Sealed with a short, plastic-capped cork that comes out easily, with a vacuum providing a touch of resistance followed by and a sigh. Has a dark brown-red-orange colour under bright light; in normal light, it's almost pitch-black.

    Nose resembles an old whisky barrel full of dark chocolate. There are top notes of barbeque smoke, vinegar, chocolate, nutmeg, and cinnamon, with emerging fruit notes of raisin, tamarillo, pomegranate, rosewater, and fennel.

    The palate resembles silky chocolate ganache, with a dusting of cinnamon sugar and candied orange peel. While smooth and sweet overall, there is a strong hit of vinegar and notes of pickled caperberry, cucumber, and mint. Over time it becomes less complex, ganache and caramel becoming more prominent at the expense of fruit.
