  Jon's 50th Birthday Dinner: Opened for an hour. This took some coaxing to come around. A bit clipped and one dimensional at first, but with the gougères, it really popped and brought out the acid backbone.

  Good texture and weight to this bottle. Some variability with these at this point, but this was in good shape.
