  • Drank a bottle at L'Auberge d'Ill, a 3-star Michelin restaurant in Alsace. Drinking beautifully right now, with fresh acidity that makes for a great fish pairing but has the chardonnay and mild oak that holds up to some creamy sauces. Pairing: mackerel with onion compote & creamy sea urchin; pan-fried John Dory with fish & octopus soup; and lobster stew with barley & sorrel.
