Took about 45 min to open then drank like a village white burg. Out of a magnum and continued to drink well on day 3. In a magnum definitely had life yet and time to further develop

Perfectly stored since release. My last bottle. This needed 30 min in the glass to fully open up. Just an easy to drink, moderately complex wine with a long finish. Zero heat and great balance. This is in its prime but should hold up well for at least 3 more years. Great value. Just a bit more fruit forward and body to confuse this for burgundy but it’s damn close.

Hedonism and Refinement at 60!; 5/14/2021-5/15/2021 (Joe and Kyla's Bar and Grill): Probably the best Chard I've had from Oregon! Nice cellar dive, dude! PNP, 45 degrees, and opens immediately. Layers of fruit and some savory notes: pear, pineapple, lemon, ginger, jasmine, and saline. I wanna be there when you open again in 5 years...

Lyon 2021 Birthday Bash; 5/14/2021-5/15/2021 (Bear Creek Woodward/Lyon Den): The cellar raid of the evening. A "little white wine" to fill the gap between champagne and wagyu ribeyes. Coming up on a decade, this was popped and poured, and opened just beautifully with citrus and peach. Good structure and another long finish. Still has time but drinking beautifully. Same score 3 times in a row now, I think I will save my last bottle another 5 years and see what the age does to it...

Drink just below cellar temp to avoid muting of fruit. Dec 30th notes apply tonight, if not slightly subdued. Best over the next year, but can last 2 more.
