2nd of 3 bottles with consistent impressions. Very nice mousse, persistent though only moderate ongoing effervescence. Finely bouyant mouthfeel, a mature palate dominated by grilled lemon and ripe peach flavors, pie crust also present. Julen789 identified cardamom (along with EVERYTHING ELSE under the sun), which I can also get behind, maybe a nod to orange as well.

We were looking for something a bit aged and mature for that night, and we came across this bottle from a producer from Aÿ that we weren’t familiar with that turned out to be a great surprise. The wine was very perfumed, concentrated but elegant; raw honey was the first element that came to our minds the moment we smelled the wine for the first time; very ripe plums, wild strawberries, guava, quince, blackberry jam, candied fruits; white and milk chocolate, tarte taitin, caramel, freshly baked bread, walnuts and pecan nuts; fresh milk, butter and yogurt; smoke and a chalky touch; lots of frangant flowers such as perfumed roses and elderflower, vanilla and cardamom as well; lovely mushroomy oxidative finish. Very dense texture with small bubbles and moderate acidity. We found it really delicious; it’s in a really pleasant moment, but I think it will endure without being too heavy for some years yet. 94pt

In a great place with more years to go. Semi-mature, great structure and length.
