  • High-toned and ethereal. Even after being double-decanted hours before, this wasn’t giving up a lot, especially in the mouth. We probably didn’t make matters any easier, placing in between two bottles of Barolo. Even after setting the Barolo aside and focusing on this wine it was tough to crack. I adore Ferrando’s Carema but wasn’t terribly moved by this bottle. I’ll forget about it for at least another three years and will hope for a different experience with the next bottle.

  • Another great bottle: nose is intense roses and tar notes. As if flowers were crushed in the bottle and stoppered. Palate is rich with fruit and a surprising definite lemon note, a real tartness balanced by the rich fruit of Dark cherries. Tannins develop after about a half hour and give a long lasting tingle to the finish. I'm going to push this wine out to 2012 instead of finishing this year, since it clearly is lively and lots of room.

  • Another stunning bottle. Intense roses and moderate tar on the nose. Rich fruit palate balanced with tart flavor of dark cherries. Also elements of licorice and cedar. Tannins are medium with a satisfying moderate pucker.

  • Another great bottle of this Carema: nose is intense roses and modest tar notes. As if flowers were crushed in the bottle and stoppered. Palate is rich with fruit, a real tartness balanced by the rich fruit. Dark cherries. Tannins develop after an hour or so. I experimented with this bottle by opening and drawing off 1/3 and 1/3 bottles into glass 250ml vials and had one each day after the first day. The first day (bottle opening day) all the above was true and delicious. Day two was a bit more muted on the nose but still very evident, and the tannins and ending were even stronger and delightful. And day three, it was as strong as on initial opening with no real apparent loss of nose or flavor. For what is sometimes considered a delicate version of nebbiolo, this really has staying power, and doesn't oxidize in the no-air glass vials.

  • Nose of intense roses with soft tar notes. The palate is tart with soft fruit and balanced. Tannins are moderately strong towards end and the finish just doesn't finish. Needs a good hour and half or so to open.
