Part of the meal/wine pairing at NéMo in Tokyo. I have had the ‘14 Valliniere before, but this is the first time I hve tasted the ‘12. This wine is entering its maturity, and it was somewhat less sauvage than what I expected. A touch of (to me, pleasant) brett, with lovely aromas of Provencal herbs and lilacs, coupled with mushrooms and forest floor. Some blue fruits too. The palate presents a more masculine side, with some meaty, gamey, and mineral notes. Tannins are present but fine. This wine worked wonders with what was possibly the best chicken dish I have ever had - Shamo chicken, a decidedly gamey chicken with a substantial layer of fat under its skin, with more in common to pheasant or duck than what we get in the US when ordering or buying chicken.

From glass. Wide, perky nose that along with perky berries had some stinky notes of unpleasant things burning on the campfire; these blew off, leaving some sweet meat and smoke. Palate of perky dark berries and tar...and the corn, the corn that has become a bete noire with me and reds the past 18+ months (am I alone on this?). Some sneaky, fine, drying tannin. Overall, fun.

As good as the nose and the attaque of this wine is, I am distracted by a faulty element on the mid palate that gets stronger towards the finish. It is not the Brett , rather a drying focus on the pips that goes wrong somewhere. A pity. Otherwise a very pretty and dare I say elegant rendering of this wine
