A superb example of how a matured Champagne can be better than an even excellent young wine. The two most dramatic changes in this 16 year old wine are (1) the saber sharp acidity that used to be a steel wool scrubber in the mouth now is gentler, soothing, juicy, and delicious, and (2) the aggressive and dry austerity of the young wine now is more relaxed, laid back, and caressing. The aromas go beyond yeast and toast toward creme brule, roasted almond, and dash of vanilla bean and white chocolate. The swallow releases a spike of higher acidity, but with the riper and juicier taste you can get from a lemon by first rolling it back and forth in the palm of your hand on the cutting board. The long finish is a splendid fruit salad of apple, pear, guava, lemon, and lime. Overall, the best this Champagne for the new millennium starting in year 2,000 has ever been.

Beautifully aged champagne. Dark yellow. Warm brioche, lemon, and lime aromas. Beautiful fine but lively perlage, wonderful acidity.
