Pop and pour to pair with some braised short ribs. Bacon fat and beef hit you immediately on the nose. Tasted far more elegant than expected given the nose, and was a wonderful pairing with the short ribs. No hurry here.

Opened and slow-oxed for about an hour; The nose on this jumps out of the glass, with fragrant aromas of juicy red fruit, white pepper and soil tones; The palate is medium-bodied, with plenty of concentration from the fruit and some savory undertones; Very delicious right now and will continue to evolve for years to come
