A solid effort with time to go. Definite yeast notes on the palate. Drunk at the after party following our oldest son’s wedding. Probably not a fair follower to the Salmon-Billecart 1999. Nevertheless, good for celebrating!

Still quite lovely and softer. Yeast on the front end and green apple to finish. All the pleasure of an older champagne.

For Valentine’s Day. No need to rerate. This is a before dinner quaff for sure. Lighter now with less sharpness of course, given the age. Green apple now predominates. Very pleasant and short. Has a lot of life left in it but i doubt that the taste profile will change much. Lovely.
