Not as good as my previous bottle seems to have been from my note, then again that was quite some time ago. Crustaceans and lemon on the nose. High acidity, lemon peel, green apple, chalk and a salty minerality, but lacking that De Moor oomph at this stage, that concentration I generally get. Still decently enjoyable and recognizable as Chablis.

Dekantert. N: smør, sjø, tang og østersskall. M: lett kremet med bra mineralpreg. Bra konsenstrasjon og lengde. Den mest rike av de alle fra de Moor. Ørlite alkostikk i avslutningen. 13,9 % ABV. Biodynamisk. Drikk nå.

Another excellent Chablis from de Moor. I'm beginning to see the house style of this producer - a quite concentrated and fruity style of Chablis while still true to the origin in a highly acidic, mineral package. There are clear parallells with the Bourgogne Chitry 2014, but this is maybe a little denser.

Brilliant village chablis. Fermented in old wood, which gives a leesy aroma profile with rounded yellow citrus. Very nice balance between zesty fruit, mineral freshness, mouthfilling texture, and a lingering finish. Notably high concentration as well as elevated alcohol (13,9), which is just fine as the acidity is equally high, and all other parameters are in balance. So happy to have more bottles.

Pop n' pour. What an amazing value. Classic, tense, steely Chablis. Full, focused nose with underripe orchard fruits, lemon/lime and minerals. Palate is chiseled. Long finish.
