A masterpiece in elegance. Pale yellow. Nose: very clean and mineral on the fore, with richness and depth building up as a second wave. Palate: minerality, then some hazelnut and faint butter. Long finish. Such incredible balance.

PYCM & CM Chassagne Caillerets (Cabotte, London): Similar on the nose to the 16, just a sense of being a little broader, though only a fraction. Broader on the palate too. Nicely mineral and lime timged finish. Generally tightens with air. ****

Stony mineral with great aromatic depth. Almost silky herb note and camomile. Pure with a richer body and intense flavour. Steely elegant.
Parcel from wine-maker’s parents towards the top with stony and shallow soil. It’s his reference for all the other wines, never high alcohol, never low. Caillerets is one of the most distinguished wines of his cellar and my personal favourite of the tasting.
Multidimensional Grand Cru quality in all but name.
