  • Last of 12, pnp, perfect cork and level, as December bottle, in decline, drink up! Still VG (16).

  • I had high hopes for this after its been in my cellar for 15 years. Drank over 4 days. To be fair, the wax had chipped off the top already so was absolutely time to pull the cork! Which by the way came out way too easy, was a bit loose, uh oh.

First day was monolithic. I thought oxidized and over the hill. Could tell it was well made just meh on the profile. 88 points.

Next day seemed to open a bit and improved. Fourth day, now it started to emerge. That was a shocker. Acidity decided to show up for the party with nice tangy citrus. Mouthcoating unctuous finish. Good balance.

Glad I held on to it vs draining after the first day. I have one more, no telling how long these will last if in pristine condition.

  • 11th of 12, pnp, perfect cork and level, in line with Feb bottle only more so, too fat and hiding typicity, now slightly darker with hints of oxidation through age rather than pox, so risks now on downside and time to drink up. This bottle still VG (16).

  • 10th of 12, pnp, perfect cork and level, not the worst bottle but far from the best, pale gold, too fat and without authentic Chablis cut, though underlying salinity evident, sense of incipient pox, the Preuses appears to be holding up better (usually vice versa), downside, drink for safety. VGI (17).

  • Everytime I have the opportunity to taste Vincent Dauvissat's wines, no matter whether it is Les Clos, Les Preuses or Forest, his genius radiates thru. These wines are of such a sophisticated minerality, purity and focus to a level impossible to find in other Chablis than Vincent's.
I have nothing but great memories drinking his wines, and having met him once personally: when I praised his winemaking and he simply responded: I much rather be in my vineyards but I owe these people to attend this tasting". A true master of wine, dedicated to his mission. No need to say this is as good as it gets.

Ravenue is bigger and rich, like comparing a Chamber Orchestra to a genius solo violinist. I still prefer the Dauvissat most of my moods
