A mostly Jura night: Probably the first vin jaune that I liked. Fresh and not too oxidative, the high acidity brought a sharp focus to the wine that I liked. Very quaffable and thought it would've been perfect with some cheese (got some durian instead, not complaining!).

Lovely vin jaune, first sip was a little cold (cellar temp). Didn't quite have the aromatic sparkle of some of the other vin jaune I have had. Let's see how it evolves.

Decided to purposefully enjoy my first bottle of Vin Jaune with two good friends and the pairing of quality cheese. For cheese, we had on hand DiBruno Brothers' aged Gruyere (great pairing) and Adarre (goat/sheep mix). The Chalon was decanted 1.5 hours before first sip, which emphasized its sharp flavors of oxidation, like a smoky fino sherry. It became beautifully smooth as it warmed to room temperature and our mouths were repeatedly coated with the salt and fat of the cheese. Terrific experience, though not calibrated against other Vin Jaunes.
