  • Our NYE champers. We had our first couple of bottles 5 years ago and really enjoyed them, but cellared this bottle for an additional 5 years to see if we could add another layer of complexity. I thought it might be over-oxidized when I first opened it, but wow, did it come around. It started to turn after about 15 mins, and after about 30 mins the cellaring paid off. It was beautiful, with some brioche and dried apricot, but still enough acidity that it was lively. I actually topped it and saved a glass for NYD, and it was still excellent the next day with lots of bubbles. 100% Chard. Served with a cheese board.

  • The wine looks light gold colored. The legs are slow. There is no sediment in the bottle. It smells like almond and ripe apple.It smells more developed than it is. It tastes like ripe Amalfi-lemon, apple and honeydew. The body is medium. The wine has smooth texture with a little acid-sting. The wine finishes long. The wine has medium acidity.

  • Smooth and refined, palate cleansing Champagne, featuring a buttery nose of lemon, baked apple, and a touch of honey - tell-tale BdB characteristics right off the bat. Not too complex, medium-bodied, good concentration, and quite seamless, nothing out of place. A mix of citrus and nutty flavors flow across the palate to a long, suave, and expressive finish. The bubbles faded somewhat after a few minutes in the glass, so I'd say it's ready. It's quite pleasurable, but not worth the $85 price-tag (although my wife gave it a 95).

  • Medium golden yellow with lots of bubbles. Well rounded and rich nose with brioche, baked apples and a hint of citrus. Medium acidity (6/10) and medium bodied. Long finish with baked apples, minerality, and about a bit nutty. Drink till 2030.

  • Nutty and earthy aromas jump out of the glass, with lemon, lime, and brioche joined by a pronounced nuttiness on the palate. Laser acidity keeps this (still) fresh and lively.
