  • Nebbiolo Dinner (Imperial Treasure Shanghai, Ngee Ann City, Singapore): A beautiful village, drinking wonderfully at 25 years old and really punching above its weight. It had a lovely mature white Burg nose, with sweet, slightly honeyed tones and a lick of caramel around soft aromas of pears and browning apples. The palate was every bit as lovely. We caught this at the unique moment where it already had a fully matured softness and integration, yet while it was also still very alive and clear, with a juicy core of appley fruit gently layered with honey and caramel and just that little brush of spice and mineral as the wine slid away into a surprisingly clean, focused finish. This was lovely, mellow stuff, not pretending to be anything more than a village wine, and perhaps just fading a little right at the finish, but a gorgeous drink nonetheless. A fully matured wine tentative stepping into the twilight of its life, but still really enjoyable. Now, if only every Burgundy village tasted like that at its age.
