Extraordinary wine that has changed massively in the five years since my last bottle. Gold, almost orange colour, slightly hazy. On the nose, intense aromas of lemon zest, pear, honey, and a very evident saline note. The palate is similar with the salty minerality very evident, but not dominating the fruit. Medium+ body (the 14.5% alcohol is not evident), balanced by racy acidity. Great texture in the mouth - so much going on. Long citrus and salty finish. This is not easy drinking, but it certainly makes you stop and think in your tracks. I loved it but perhaps not for everyone. I find it hard to put a drinking window on it, but given the evident development of the past few years, I would probably suggest 5 years more at most.

Oxidized, golden color, a bit cloudy, past its time but tasted ok, almost sherry like with a dry finish, very interesting but a major disappointment as I bought it at the winery in Santorini, Mr Hatzidakis was a legend who unfortunately died a few years ago, won’t find another bottle, did not taste like an assyrtiko but I have never had a 7 year old one, oh well. Drank with shrimp, veggies and pasta as I was trying to recreate that Greek island feeling.

Golden colour. Very complex in the nose with orange peel pear, ripe citrus some smoke, mineral to name just a few scents. Medium bodied, saline, viscus, racy but at the same time elegant, very complex and long. At peak. Outstanding wine, one of the best Greek whites I have ever tasted.

Pausing for the Cause 2022 (Part 2) (Chicago, IL): Even neglecting the backstory of this, you still can't help but to be impressed. Drinks a little like a botrytized dry Alasatian wine, with some oiliness to the texture. But at the same time there are so many layers of complexity here, with a slight orange peel note and lots and lots of salinity too.
