A private lunch (Restaurant L'Étoile du Nord par Thierry Marx, Paris, France): Quite creamy and rounded initially, with ripe blue fruit, rather sweet and with spicy oak, quite international and not necessarily very typical for the terroir. With more oxygen, fresher and more floral notes emerge, gentle tannins and even some Savigny sauvage. This will need a few years to shed its baby fat and to find the balance between fruit and minerality, but it should turn out well. The elegance is there.
