Community Tasting Notes (1)

  • Excellent. Pop and pour; opened after the Sauzet just didn't do the job. So different, and so much better than the Sauzet. Very generous nose with loads of lemon curd, vanilla, and the slightest hint of toast. On the palate, acidity is on point, showing loads of graphite and then more pure citrus, followed by serious slate. Very cool finish, leaning slightly bitter, showing some pith and citrus oil notes. Fantastic juxtaposition of the fruit on the nose and the acid/bitter on the palate.

Day 3: This has been in the refrigerator since we opened it, but it keeps getting better with time. Today, the fruit on the nose is slightly more mature with some hints of pickled ginger. Just stunning.
