  • Slow ox 30 minutes. Petrol and slightly ripe pear on the palate along with a dollop of minerals. On the palate honeysuckle and peach are almost overwhelmed by the tangy acidity of fresh lime. Maybe even a touch of bitterness. More minerality and acid on the finish. If you have the right food this balances out a bit, but not good as an aperitif alone. Will wait another year to see if this smooths out at all.
