Vinous, complex, lovely texture, some slightly grippy tannin. Needs to be sitting in the glass for a while to open up. It reminds me of the wonderful white burgundies from the 1970s and early 1980s when they were 30 or 40 years old (I know it's pinot noir). Doesn't happen these days. It may be a bit oxidised (deliberately) but done much better than some others.
I like this a lot, but I can imagine some people might be expecting something more conventional.
I didn't check my horoscope or moon chart before I opened it. Maybe someone can tell me if I opened it at an opportune day (today, in the southern hemisphere if that makes a difference)
Day 2 after being in the fridge overnight with a stopper, just as good, maybe better.

opened on a root day. light gold color with reticent fine bead. bursts with an oyster mushroom scent followed by hints of mineral, bread, and honey. mid weight palate with integrated acidity and a sleek, almost viscous texture. quite vinous. savory flavors with more mushroom, soy, subdued cherry fruit, and honey. unique and delicious champagne.

DG 06/2018 Red fruits (cranberries, blackberries), green apple, smoke, a bit of gunpowder, beer-like yeastiness, sour candies, grapefruit. Light texture and very present acidity. Very simple, almost boring, but everything is where it has to be. 84pt
