Here's the "son" of one of my all time favorite casual sippers, Ameztoi's Rubentis Txakolina rose. It turns out this "son" is a traditional method sparkler that ages on the lees for a long time. My bottle was disgorged in 2022.
Shortbread cookies, fresh baked bread, lemon zest, wet stone and a certain steeliness on the nose. The palate adds salinity, rose petals and green bell pepper. Fruit backward and mineral driven, with a certain airy freshness that makes it seem younger than it is.
Medium - body in a great way - again, that airiness. Medium acid with a pretty long finish. A wine that disappears on the tongue.

Tart and zesty with a little touch of funk. Mostly red berry/cherry and a little lemon and apple.
