Champagne Happy Hour at Pizzeria Bebu (Chicago, IL): From magnum. I have to admit I didn't really understand this champagne very well -- it seemed just a little thin and empty on the palate, with lots and lots of acidity. I kept looking for fruit and weight, but it never showed up. I did like the minerality here. I think there is definitely potential here; I would love to explore this wine in a really ripe vintage, as I think it would give this a good amount more richness.

From magnum. Unusual nose of caster sugar, cold cigarettes, some reduction. Somewhat tart and woody - a telltale sign of a grower champagne. Very fresh, green, unripe apple. Beautiful pairing with fresh oysters - gets milder this way. In fact it tastes like red currant when paired with oysters, interesting. Overall too growery and naked for my liking at the moment, but the quality and potential is there.
