Tokyo, Nobu, off the list. Telltale nose of Pinot with bruised apple, yeasty/bread notes and something smokey, flint. All very seamless, integrated. Nothing feeling forced. A great Champagne nose. On the palate what struck me is a super fine mousse. Feels more effervescent than sparkling. A super Blanc de Noirs supremely suitable for food-pairing.

Started off a little shy on the nose, tightly wound and deeply stacked on the palate. Bright green apple spritzed with lemon, touch of cinnamon. Some confectionary aspects to the mid and a linger finish. Opened up beautifully and had flared out to a stellar showing when we went back to it after dinner. Powerful yet elegant, fully fleshed out, no holes. I got none of the 2010 issues on this wine, just an impression of a very impressive and quite delicious champagne with plenty of character. Leaned more towards crisp and bright, but did have some richer marzipan notes as well. Deutz may have made the wines of the vintage in 2010 if this is any indication.

Drank out of magnum. Quite the enjoyable experience. The Pinot varietal is evident. Fresh and lively upon opening. Medium intensity on the nose. Fine beads. Red fruits, cranberries, floral and dough. Good energy, high acidity and long finish. Certainly a gastronomique wine. Wish I had more.

Drinking very well now but likely also great potential to last. A lot of nice bakery notes and different berries wrapped in lingering acidity.
