Aligoté at Table, Donkey and Stick (Chicago, IL): This has the unmistakable signature of the producer -- the bright reduction and the bitter minerality, as well as acidity that is incredibly high. There's a touch of green here as well, but also a waxy texture. In that sense there's still some of the grape signature left, but this tastes more like Arnaud Ente than it does aligoté.
