  Saturday hangout at Domaine (Chicago, IL): The whole "vin nature sans sulfites ajoutés" on the label had me worried for a minute, but of course the proof is in the bottle. At least this bottle wasn't natty; it showed a very syrah nose with lots of black fruit and meat. The palate is darker-complexioned but at the same time quite light. I love the florals and sweet fruit here; this feels like proper syrah to me. I'm certainly curious to see how this vin nature sans sulfites ajoutés stands the test of time. Or is it just a case of drink it now because it's already delicious?

  第四天，很明确。气味/口感都是中等分量。但是，偏lean的，标准，典型，很好。没硫，照样挺了几天。

  Decanted about 30 mins. Slight animale upon opening. Some meaty-funky elements. However, the palate is pure, clean, darkish red laser beam syrah. Very pure. Seemed like this was wide open and then closed in a bit after about an hour. Will see how other bottles do with some additional time. Nice wine.

  After about 1.5 hours I went back to the wine and it developed this meaty, smoky, dark fruited dusted tannic grip on it and that ultra fruity profile went away. It still didn’t have the depth of the Chave but it was still delicious in its own way.
