Very clean and fresh despite the additional aging at 3C in show filled rooms. Does not feel heavy and worked actually very well with an excellent diner at Kato Sushi in Niseko

By the glass to finish a beautiful dinner at Dinings SW3, London. Genshu, undiluted bottling and hence the 17% Alc, aged in snow. Quite intense albeit maitains a freshness and not as heavy on the soy characteristic we get to see on aged sake. This is closer to frsher sake with more depth and intensity albeit a bit more difficult to pair with food. We used it as a closing sake for our dinner and worked very well. Full bodied and solid.
