  • Labeled "Acte I, Scène III: Haut Revers du Chutat, Lieu-dit Montgueux". A Coteaux Champenois Blanc from the Haut Revers du Chutat vineyard planted in 1968. Made only in vintages when the grapes in this vineyard produce too much sugar to produce balanced Champagnes. The wine sees only a little bit of sulfites during the crush, otherwise vinified completely without sulfite additions or chaptalisation. Fermented spontaneously with indigenous yeasts. Aged for 22 months in six old oak fûts and one 500-liter demi-muid. 12,2% alcohol.

    Luminous, pale lemon-yellow color with subtly greenish highlights. Cool, fragrant and very slightly reductive nose with aromas of fresh apples and zesty lemony citrus fruit, some creamy oak tones, a little bit of rubbery reduction, light woody notes of savory wood and - after the wine has opened for a while - a hint of custard pastry. The wine is intense, somewhat lean and very acid-driven on the palate with a medium body and focused flavors of ripe Granny Smith apple and juicy lemony citrus fruits, some sappy herbal tones, a little bit of crunchy greencurrants, light notes of steely minerality, a hint of tangy salinity and a touch of woody oak spice. The bracing acidity lends great sense of structure, intensity and precision to the wine. The acid-driven finish feels long and crunchy with mouth-watering flavors of salt and lemons, some fresh green apples, a little bit of leesy yeast, light stony mineral tones, a hint of sappy herbal character and a creamy touch of custard-like richness.

    A very lovely, clean and impressively focused effort. Feels even better than the already quite impressive bottle I had 1½ years ago - the lactic qualities the wine exhibited then have finally faded away and some subtle woody notes suggestive of barrel aging have emerged in replacement. Overall the wine feels like it is evolving in the right direction. Feels still painfully young and really calls for further aging to resolve its high-strung nature - no point in opening any bottles within the next few years. Lovely and very promising. Highly recommended.

    Pale grassy-green color. Somewhat restrained nose with a reductive note of flinty smoke followed by aromas of leesy yeast, some apple peel, a little bit of crunchy quince, light reductive notes of rubber and a sweeter, candied hint of gummi bear. The wine is tangy, lean and medium-bodied on the palate, yet not tightly-knit or unripe, but instead relatively ripe with flavors of tart green apples, tangy salinity, some quince, a little bit of lemony citrus fruits, light creamy notes and even a lactic nuance of buttermilk, a hint of sweeter white fruit and a touch of steely minerality. The wine is very precise and incisive with its bracing acidity. The finish is tangy, crisp and saline with long flavors of tart green apples, some sharp lemony citrus fruit tones, a little bit of apple peel bitterness, light lactic buttermilk tones, a sappy hint of herbal greenness and a touch of sweet white fruits.

    A sophisticated, refreshing and very youthful Coteaux Champenois Blanc with very tangy, acid-driven overall character and a lovely streak of sweeter, ripe white fruit running underneath the cool minerality. Still all too youthful at the moment, but shows great promise. Probably will come across as steely, tangy and restrained for years to come, but I have no doubts this will unwind with age. Probably starting to sing only after its 10th or even 15th birthday. Perhaps not that accessible, but quite lovely.

  • Bu avec la gang de FOUDUVIN de Sherbrooke pour
    notre souper de décembre au resto AVV La Causerie de Orford.
    Superbe vin tranquille. Pas donné mais c’est plus que du bonbon.
    C’est aérien, droit et bien frais.
    Un beau nez franc et minéral.
    En bouche c’est vif, belle acidité, du salin et des agrumes, c’est vraiment déroutant comme vin.
    On a le côté droit et vif de Chablis en Grand Cru et aussi l’amplitude et le côté racé d’un GC Côte de Beaune.
    La finale est suave et aérienne, une très belle expérience.

    NOTE : Un peu de lecture sur ce producteur qui ne fait pas dans la dentelle!
    C’est Emmanuel Lassaigne , fils de Jacques, qui est aux commande du domaine.
    Il utilise encore des presses verticales « old school » pour presser ses grappes de Chardonnay.
    Dans le département de l’Aube, il est aussi connu comme le “LE Montrachet de Champagne.”
    Les vignes plantées en 1954 et 1955 sont considérées comme vieilles,
    pas optimum pour les rendements mais la qualité est au rendez-vous.
    C’est le prix à payer comme il dit, je paye plus car j’estime que c’est
    important de payer plus, c’est la qualité qui en sort gagnante!
    Pas mal tout est fait à la main, même le dégorgement, ce qui est très rare en Champagne.
    Son approche non-interventionniste se goute aussi dans ses vins, peu
    de soufre et peu de sucre, c’est le terroir qui parle.

    Vin tranquille de la Champagne.
    Un vin expressif, fin et puissant. On voyage sur des notes toastées et fruitées qui annoncent une bouche très complexe. En bouche, un parfait équilibre entre l’acidité, la rondeur et la puissance. Une colonne vertébrale capable de faire passer ce vin à travers quelques années pour que quelques notes miellées se réveillent peu à peu. A l’aveugle, je serais immédiatement allé en côte de beaune.
