We tasted a bottle from the 2021 vintage that had spent seven months on lees. Red berries, watermelon, and rose water were its predominant notes while it had just a slight hint of residual sugar. It’s 100% chambourcin.

2021 vintage. Nose features aromas of strawberry, kiwi, lime, apricot, and white pepper. Full bodied with a copious amount of medium sized bubbles that constitute a fortuitous mousse. Flavors include lemon and lime piths, strawberry, cranberry, and white peach. Equal parts fun and quality. Drink now.

Nice, refreshing sparkling. A little acidic by itself, paired with tomato chutney and it smoothed wonderful and brought the raspberry notes out.
