    (Spirale) Spirale Dear Friends, If pure pleasure is your incentive for wine drinking then this elixir should be saved for your most worthy occasion. Stephane Tissot has been profiled here before - he is one of the new masters of the emerging Jura. Tissot is known for his dessert wines and all are something to behold. Call him the Kracher of the Jura if you will but these are wines with such a presence and soul they really can’t be compared to anything else. 100% organically grown and vinified, the Spirale is a wine that defies descriptors - you just need to taste it. With barely 6-8% alcohol, this “wine” really doesn’t qualify as such (similar to Hungary’s Essencia) and must be labeled as a simple Passerille. As a finishing touch to a great meal, this liquid candy in a wine bottle is equally convincing as a topping to your hot fudge sundae as well as the lynch-pin for post-dinner conversation. In 2004, Tissot made a Spiral that has few rivals and it makes previous efforts like 2000 or 2001 seem almost shy (something I thought was impossible). With nearly 320 grams of residual sugar and a toffee/mocha/creme brulee quality that slides and glides over your palate for minutes, this is just the rarest of treats for an entrance fee that is far undervalued for the effort that ensued to create it. Massive and unctuous but still ethereal and weightless, this is a difficult accomplishment for any winemaker. Completely hand-picked and hand-made from scratch, the Spirale is a very labor-intensive wine to make and Tissot would be a happy man to know all of us appreciate the effort and dedication that goes into to every last milliliter of each split (drop by drop) he produces (which is not much). A grand treat that can compete with the world’s best and most exciting after-dinner wine experiences.
