Drinking much like 18 months ago. More old country style Syrah, but not too peppery. Getting more rounded and complex. Good now with air, or good for several more years.

2.5h air, just to be on the safe side. Medium purple color. Notes of plum, blackberry, potting soil, bell pepper, wet rocks, cedar and pie crust. Robust and mouth-filling, creamy and rich, full bodied. Dried red and black fruit on entry, dust and blueberry in the mid-palate/finish. Tannins are still rustic and chewy, but this remains very satisfying.

Some reduction dissipates to reveal the classic Syrah hallmarks of blackberry, bacon, and black olive. Acidity is moderate which leads to a somewhat soft palate on entry, but firm tannins lend grip through the finish. Very enjoyable.

A bit of a mixed bag, especially for 1st 6 hours. On opening taste for 3+ hour slow-ox a bit muddled & muddy, leaning ripe to not quite overripe, showing plush structure, with a medium light touch of stem grip & spice. After about 6 hours a fresh, sappy, tart & wild fruity, rich, ripe, red fruited vein opened up to join an earthy, muted, (seeming) mixed ripeness levels, stem inclusion. By the next mid-morning the sappy, fresh red fruit had taken over the entire profile, with just a bit of spice, stem spice/grip, dehydrated raspberries & rose petal. Medium/med+ acidity. Med intensity. A whopper of a Chameleon. The point is, this puppy needs mucho air time atm.

Forgot to weigh the bottle, but it feels reasonable. Moderately intense aromas of black fruit, loam, stems. Dry, but sweetly fruited, with elevated acidity and moderate grainy tannins. Medium-bodied, 13.3°. Polished and relaxed, give it another three years to smooth out the tannins some more. Not as intense as I remember Copain.
