Golden. Minimal mousse. Truffle and caramel aromas. Medium to full bodied, dry, creamy, racy acidity, moderate length. Fully mature Champagne just on the edge of being overly oxidative.

(Blind tasting) Very mature, oxidative nose of honey, walnut, white raisin. Almost sherry-like. Hmmm. Mature, fullish, spicy palate. Dried herbs, thyme and dried apricots. Acid on the sour side. Descent grip, but a bit too mature for my palate. Drink up.

Yellow with minimal browning. At a perfect equipoise between fresh, gingery, citric notes and some more mature Champagne honeyed tones. Excellent bottle with zingy acidity to keep it refreshing.

Full yellow, minimal residual bubbles. Medium weight, nutty, good remaining acidity, creamy feel. Very good but more oxidative than I care for.
