  • After getting through a case too early, this is now singing and perhaps my favourite vintage of PYCMs best value wine. Has gained weight in the last year. Takes time to open and it’s subtle on the nose - all about the taste. Gorgeous and waxy lemon with lots of depth, broad in the mouth and persistent, finishing with toasty minerality and great zip. I enjoy it with butter fish dishes. 92pts, drinking at peak to 2025 but will cruise to 2030

  • Dinner at Restaurant Guy Savoy (Las Vegas, NV): PYCM's 2018 Rully Les Cailloux is a limpid, light golden wine that is effusive of orange zest, pit fruits, lemon verbena, jasmine and wet stones. Medium-bodied, lightly oaked and seamlessly alcoholic (12.5%), it stays dense on the mid-palate and concludes with a lengthy, mineral-laden finish. Rully is an appellation that flies under the radar, which is also the case for the Les Cailloux lieu-dit. With this bottling, PYCM has crafted a Chardonnay that should reach its tenth birthday with grace. Ordered from an elegant restaurant's wine list, this bottle was uncorked, poured and serially sampled over three hours, fully opening after the first hour and showing best at a serving temperature of approximately 55°F. Drink now-2027.

  • Another lovely bottle of wine from Pierre-Yves Colin-Morey that went so very well with Chicken Cordon Bleu. It was rich, balanced and mouth-coating.

  • I have enjoyed PYCM's wines for some years. This is but another another example of his excellent wine making abilities. This wine was balanced, rich, youthful (good acidity), vibrant, crushed stone and citrus, and a lovely finish. It was, in a word, delicious. Over the next few years it should improve and take on an elegance that PYCM wines become over time.

  • Pale yellow. Nose is delicate: citrus fruits, fresh pineapple, saline notes, hazelnut. Palate is addictive as PYCM knows how to make it - lively acidity but in no way aggressive. Young and delicious.
