I have had this for quite some time and I was honestly a bit worried that I had waited a bit too long. I worry far too much. This was as bright and lively as a wine half its age. Tasted January 10, 2007 at an offline. Opened and served immediately in a house provided Champagne flute if you want to call it that. Light yellow color in the glass, clear hue throughout with a light mousse. Nose of biscuits, pears and apples. Flavors of tart yellow apples, pears and lemon. Light to medium acidity, light to medium body. Drink over the short term. Tasted twice over the past month with consistent notes.

Spain, etc., with MB (De Tapas Restaurant, Dallas, Texas): Initially, this wine started fairly tart, showing nice acidity on the finish—almost too crisp. I let it settle down for an hour, and the wine started to open up, exhibiting a slight floral character, with a background of toasted honey. I came to really enjoyed the wine, and it worked well as a palette cleanser for the night.

Tasted December 14, 2006 at an offline. Opened and served immediately in a Riedel Cuvee Prestige glass. Light yellow to yellow color in the glass, clear hue throughout. Earthy nose (perhaps some notes of truffles?) with some cloves and raw bread dough. Flavors of pears and lemon rind dominate with a touch earthy finish. Light to medium acidity, light to medium body. Somewhat short finish. Drink over the short term.
