  • A beautiful wine that certainly shows some evolution, but has so much energy and lightness. With air it actually became lighter and brighter, seemingly getting younger as the evening went on.
The nose showed notes of waxed apple, candied nuts and a pretty note of herbaceous wildflowers.
The palate was somehow rich feeling while being totally light. I think it was an interplay of mature fruit and bright acidity. Notes of tart apples and citrus zest complimented the wonderfully mineral palate.
Wines like this are a fantastic reminder of why we should age Kabinett. This was mature, layered, and unbelievably ethereal all at the same time.
