Taste: The feel is medium bodied with bracing, high acidity. The acidity is a bit too much right now while it is lacking some depth with lemon peels, pears, apples, custard, yellow flowers, warm dough, and biscuits.
Overall: I feel like this could really benefit from some dosage. It's a bit too steely and it lacks some depth on the nose and palate that would really make this a top-notch Cava.

Good but not great. Tasted like a HQ cava for sure but the rubberiness of the Macabeo did not let the Xarel*lo shine.
