  Decanted 4 hours, but needed much more. Great fruit, but surrounded by an army of tannin. It seemed the more air we gave it, the more obvious the tannin became. UNTIL we paired it with dinner, which was a Thai beef short rib coconut curry from Chrissy Teigen's cookbook. Perfection! Rich and silky, and still obviously a baby. That mountain fruit is so tannic in it's youth...we should have waited another 5+ years to pop this, but as it was a gift from the winery, we felt Christmas Eve was the perfect time. If you have any, I'd recommend holding until 2026 and then enjoying through 2036 and likely beyond. This has the structure and fruit to last 20-30 years easy.

  Over 2 nights - very balanced, black fruits. Intellectual, restrained, layered, nuanced; not in your face fruit bomb (say Bevan? Well I can also enjoy)
