Colour: Straw yellow Very fine bubbles … they really keep (1h40 lm after opening bottle they are still very intens me and pleasantly present when tasting) A wonderful nose (notes confits in French) A full bodied champagne with a wonderful length. A wow!

Tasted blind. Straw color. Apples, pears, lime and brioche on the nose. Mostly cantaloupe and pear with bready notes on the end of the palate. Acidity is medium-plus. Overall, tasting blind, it tasted like a vintage champagne. Very good.

At La Table de Pavie, St. Emilion. By the glass. Though a bit bready on entry, this food-friendly crowd pleaser is rescued by a nicely placed bead of acidity that saves it from becoming too doughy. White melon rind, lemon, fresh sourdough, and white rock notes put this square in the middle of a sea of Champagne that are “more than fine.” You know what to expect here when swimming in this pond.
Having the 2012 Egly after this was just…… unfair.
