Last bottle of this and it’s just drinking exceptionally. Deep, saline, and savory, with just the right hint of oxidative quality. Surprised how good this is and how well it’s evolved. Had with a hake fish chowder that was a great pairing.

Very enjoyable, not something you typically come across. Certainly you have a hint of oxidative elements, but this was just rich, green apple, flintiness. Great with crab, looking forward to the other bottles of this and the Mercedes.

The Spanish Acquisition Sherry tasting (Prince Sydney, 40 Hansard Street): Very slightly sherried version of the Blanco de Hornillos which lends a little nutty note to the citrus and a touch of animal musk. Juicy, tangy, a little texture to the mid palate tugs gently at the tongue. That sherried note is also more to the fore on the palate with that citric tang. Interesting
