Saint-Bris is certainly one of the more interesting appellations in France. Very pale gold in the glass. For a Sauvignon Blanc the nose is quite restrained and certainly shares many characteristics with its famous neighbour - white flowers, green and red apple, flint, mandarin and warm spice. The palate here is typically racy with a fleshy texture and mouthwatering acidity along with ripe stone fruits and a touch of chalky minerality. It finishes with decent length but a little one dimensional for it to be of real note to me but it remains a good example of the category and is typically very well made in the William Fevre style. Cracking with a plate of oysters. Drink now, don't wait.

Sauvignon Blanc Zoom tasting. Drank in Gabriel Standart. Appearance is clear, pale intensity, lemon colour. Thin legs. Nose is clan, medium+ intensity, with aromas of steeliness, chalk/flint/stone minerality, green limey fruit. Youthful. On the palate, dry, high acidity, medium- alcohol (12.5%), medium- body. Medium intensity, with aromas of brine, Chablisienne green apple + green lime fruit, chalk/flint/stone minerality, cool steeliness. Medium- finish. Lean and green, but not mean, just cold hard tough love. Drink young.

Served at very cold temperatures, fantastic when served with greasy foods, the super high acidity cuts through all the grease and delivers strongly on fruit.
