En bouche, les saveurs se précisent, pomme très mure, croquante à la ceuillette, légèrement salin, pâtes feuilletées. Persistance moyenne.

Classics of Spain Tasting (Plum Market - Chicago IL): Walk around tasting, small glass. Light but fresh and very bright with good balance. Lemon and green apple character. Good length. I think it would be more interesting with more time on lees. Good now.

A: Pale lemon and fine mousse N: peach, apple, lemon, tangerine rind, brioche, P: Dry, high acid, medium alcohol, medium (-) body, medium (+) intensity and medium (+) finish clearly made with the traditional method and much more expressive than a Cava from the same region. Where is the rubber smell that I get from cava? gone! Very fresh wine. I love the balance of intensity and acid and just a really lovely one, Has lots of primaries and secondaries but no tertiaries so would probably not choose to age this for improvement but the wine will certainly keep if you lay it down with all that crisp acid to keep fresh. Winemaker deliberately not part of the cava movement. Thinks the winemaking associated with cava has undermined its value and true potential.
