Lovely wine, easy to drink. Medium acidity with a creamy texture. Initial sip leans heavily to crisp apple, with a touch of air, pear and peach notes emerge along with brioche and fall spice. Wish I had more than one bottle.

The inaugural vintage. 40% Dijon 76 Chardonnay, 60% Pommard Pinot Noir. The pressed juice is fermented and aged 7 months in neutral French oak. The wine is then aged en tirage for 2 years before release. The nose show a range of scents including apple, pear and white peach with nuances of lemon zest, white garden flowers, brioche, biscuit, chalk, sea spray, wood spice and marzipan. The mousse is discreet and fine. Creamy texture plays with the bright acids the keeps the wine lifted. Fresh lemon notes mingle with rich apple, white peach, and bosc pear that incorporate orange blossoms, honeysuckle, marzipan, brioche and biscuit flavors that finish with underlying sea mineral like nuances.
