  • This pours light gold with flecks of green evident. The nose is immediately lifted and complex with the richness one would expect from Grand Cru Chablis. The nose is of honeydew melon, lemon custard, meyer lemon, candied apple, light notes of toasted cashew a touch of seaweed, and whisps of sandy beach. The palate enters on the inherent richness of this wine with a lovely sweet core and high green tinged acid. The finish is quite lengthy replaying the lovely richness of the nose. Overall we have a very classic Grand Cru Burgundy, that certainly has Grand Cru weight and complexity, but on the other hand doesn't really speak to Chablis lacking some of the chalk mineral and oyster shell you might expect. Tasted blind I'd expect more calls from the Cote d'Or. I can understand both those who may not care for this and those who would love it, but I'm quite firmly in the latter camp. This is certainly not something I'd do with Oysters. But fish in a rich, buttery sauce? Sign me up!
