  • Whiff of barnyard, quickly replaced by menthol. Not much fruit. More barnyard. More menthol. Mild tannins, low acidity. A little watery. Dry clean finish.

    Over time develops a little more grip.

    Day 2:. Let it breathe again for another 30 minutes. I think that's what this one needs to develop a nice texture. Pairs well with food, otherwise it doesn't have much flavor on its own.

    Day 3: OK, here we are. Full texture and flavor, especially with food. Compliments dessert especially well, given the wine's clean finish and a strong, balanced backbone of acidity and tannins.

    Definitely buy again, especially at the price, but next time let it breathe for over an hour. Amazing how much this wine changed from initial open to now. This is not an oaky wine, nor fruity in any but the most fundamental way. It's about a mouth-watering structure that amplifies and compliments the taste of food.
