I don’t often like Salon as I can find it too sharp and acidic for my palate, but this was nicely on point. No formal note but a golden hue but lots of bubbles and freshness indicate a well stored bottle still has plenty of life left. Obviously in a developed phase but by no means over the peak and should continue to drink well over the next decade, albeit probably at peak now. From BV

Piemonte: Back to the truffling!; 11/24/2022-12/3/2022 (Wineries and various restaurants): I honestly thought we might never drink Salon again except for the few bottles that we have in our cellar that are aging a bit more but this was very well priced off the wine list and hard to turn down. There is something about Salon that is very appealing - all vanilla bean and more flavorful and just wants to grab you. Still quite young and fresh in style. Drinks very well. To be fair, I think it is an amazing champagne, but maybe not worth the price it is these days.

Epic Bordeaux for an Epic Birthday!; 9/1/2021-9/12/2021 (Paris & Bordeaux): Not every day that you are drinking 90's Salon on back to back days but life is pretty good. This was showing a touch more age than I would have expected. It's got that vanilla but less exaggerated. Bright. Maybe a bit more toast? But drinking nicely.

KYD BYO (Koan): The core of the green apple fruit is still crisp and acidic. It has opened up but it is truly still a very young wine. There is a touch of almond bitterness in the long refreshing aftertaste. It is so amazing that the youthfulness is still present. The wine just jumps from the glass and is truly a legendary wine. Absolutely stunning!!

Deep yellow, light mouse with small bubbles. Pear, cider, apple, and some vanilla.
In the mouth, the above flavors were joined by white stone. It firmed up nicely to show very good length and acidity.
This is at its peak for my taste. Enjoy!
