  • At first didn't decant - After first sips decanted for 1.5 hours.
    Straight from the bottle there were clear notes from the spontaneous fermentation (cow barn, dirt). This "dirtiness" was accompained by nice notes of cherry with a nice foresty touch. Hints of vanilla on the backpalate.

    During the evolution in the decanter, acidity got more pronounced the dirt notes slowly disappeared and you were left with a nice primary notes (cherry, hints of rapsberry, forest, bit of earl grey tea) and leathery and meaty notes. Good example of Pommard and Burgundy.
    Drink now till 2032+.
